I think there might be something wrong with me. I eat things like this salad, and I do enjoy them – no really, I do – but ten minutes later I feel that familiar pang. I know that it should fill me up, it’s full of vegetables and it makes me feel good to eat it, but on the longevity side it’s not coming up trumps.
I recently volunteered to start making the food for my weekly cribbage league, I wanted to do something different than the soggy sandwiches we were used to having. These little morsels are a party food, snack or with a side salad a very satisfying supper. Filo parcels are no new thing, and spinach and feta is quite a classic filling. Because of this there are a range of recipes out there and each one is quite different. I couldn’t be bothered amalgamating all these different recipes, nor could I find one that I liked the look of, so I made it up as I went along and they came out pretty well.
This past week has been a bit of a washout cooking wise. We had the big birthday party and with it overnight guests and the obligatory sore heads the next day and then a wedding which seems to have eaten up the entire weekend − although I can’t think of many better ways to lose a weekend than in celebrating the union of two very special people. The result of all this is that I didn’t make any meatless dishes this week worthy of the blog, so I’m rehashing a previous vegetarian dish that I posted before I started the weekly Meatless Monday series.
Sometimes I make a list of what we’re going to eat throughout the week; sometimes we abide by the list, and sometimes we don’t. On this particular day we failed to plan for our planned dinner and had to make due with what was available, which turned out to be sweet potatoes, onions and eggs.
I’m just going to jump right in there and say it: These sliders are out of this world! Not only are they beautiful to look at, but the flavors! Oh, the flavors! They are familiar but exciting and the combination is probably not one I would have ever come up with on my own.
It’s Monday again; back to work, back on the diet. At least there’s Meatless Monday recipes to look forward to! This one is a soup. I’m beginning to realize that when we are dieting, we eat a lot of soup; and since we’re pretty much always dieting, we are pretty much always eating soup. Strange.
I bet you’re so sick of reading about cabbage soup that you’d be glad never to see another bowlful of hot, steaming, brothy vegetables ever again. Well, that’s too bad because I’ve got another version for you and this one’s got some Asian flair!
This Meatless Monday post is an amalgamation of the minted potatoes and fava beans from the first Piacere Farmer’s Market Challenge and a recipe from one of my newer Olive magazines. It’s so simple − it only has four ingredients and takes less than half an hour to make − but surprisingly satisfying and tasty.
On my way to California from New York, I bought a Food and Wine magazine at the airport and, flipping through, I landed on a delicious looking salad starring an ingredient I hadn’t eaten for a long time: hearts of palm. I only had a vague recollection of a slightly pickled, tender white tubular vegetable with a delicate flavor. A bit of research on Wikipedia − fountain of all knowledge that it is − revealed that South America supplies the majority of imported hearts of palm which are, as you might suspect, the heart of certain types of palm tree. The cans I bought were products of Bolivia and, for that reason, I decided to ignore the $3.99 price tag per can which I thought was pretty outrageous for a bit of fibrous white veg. However, the harvesting process is pretty labor intensive and must also be expensive so, in addition to import costs, I can understand the high price tag.
A friend of mine, whose blog you can find here, suggested I start posting recipes for Meatless Monday, a phenomenon which seems to have taken hold in foodie circles on Twitter. The idea is that by cutting out meat once a week you will not only improve your health and well being, but you will also reduce your carbon footprint and take a big step towards creating a more sustainable lifestyle for yourself and your family. I think we can all agree that these are good things and there are few things that irritate me more than people who believe that a meal without meat is somehow incomplete − I’m a poet and I don’t know it! − because vegetables have so much more to offer than looking sad and neglected on the side of the plate.
