This Meatless Monday post is an amalgamation of the minted potatoes and fava beans from the first Piacere Farmer’s Market Challenge and a recipe from one of my newer Olive magazines. It’s so simple − it only has four ingredients and takes less than half an hour to make − but surprisingly satisfying and tasty.
Lately, I’ve just been craving blue cheese. Maybe it’s a sign of my palate ‘maturing’, or maybe my body is craving some mold – obviously I haven’t inhaled enough during the damp English winter. But blue cheese has been on my mind and I’m always in the mood for a burger, so a blue cheese burger seemed the obvious solution. The addition of bacon needs no explanation, it just makes everything better.
Sometimes you just need cheese, cream and butter. That was the general consensus at my house Friday night, so we cooked up a bubbling, cheesy, creamy dish of macaroni and cheese.
