This doesn’t need much explaining. Throw the stuff together and enjoy. It’s simple, quick and totally delicious.
Bon appetit (without the meat)!
1 block Halloumi, cut into 1/4″ slices
1 Avocado, sliced
1 Mango, sliced or scooped out with a spoon
Salad Leaves (Bitter or peppery leaves would work well here to balance the creaminess of the cheese and avocado and the sweetness of the mango)
Pine Nuts, toasted
2 Tbsp Red Wine Vinegar
1 Tbsp Honey (more or less to taste)
3 Tbsp Olive Oil
1. Arrange all salad ingredients on the plates.
2. Whisk together all dressing ingredients and drizzle around plates.
