This Meatless Monday is short and sweet. This is one of our standby lunches and it works any time of year – even in this in between time between summer and fall.
The bulgar lends heft and the vegetables bring a variety of colour and texture. The feta adds a salty note, but you can easily leave it out to make this vegan.
