Meatless Monday: Bulgar Wheat and Vegetable Salad

This Meatless Monday is short and sweet. This is one of our standby lunches and it works any time of year – even in this in between time between summer and fall.

The bulgar lends heft and the vegetables bring a variety of colour and texture. The feta adds a salty note, but you can easily leave it out to make this vegan.

Satisfying lunch or simple supper, this is a winner so check out the original post and make it!
