Savory Pain Perdu

Ever found yourself home alone and at a loss as to what to eat for dinner? I usually don’t bother to cook anything too strenuous when it’s just me – telling yourself how delicious something is isn’t quite the same as someone else saying it, is it?

On this occasion, I decided on a savory version of french toast, or pain perdu or eggy bread depending on what country you’re in. It was just bread dipped in egg, salt and pepper, fried in butter and served with a green salad with a zesty mustard vinaigrette. A healthy squirt of sriracha over the warm bread was just enough to send me into throes of ecstasy.

You can’t get simpler than eggs, bread and butter, but sometimes it’s the only way to go.
